Strawberry Rhubarb Cobbler

Ingredients

4 cups chopped rhubarb/apple/strawberries
3 Tbsp flour
1 cup sugar
3 Tbsp butter
¼ tsp salt
Toss together and pile into a deep baking dish.
1.5 cups flour
¼ cup sugar
1 tsp baking powder
½ tsp salt
115g butter
¼ cup milk
1 egg

Directions

Preheat oven to 200 degrees. Cut butter into the dry ingredients. Add milk and egg but do not over mix. Dot spoonfuls of the batter on top of the fruit, You don’t need to completely cover the fruit as the juices will bubble up between the topping. Bake for 30-45 mins until crust is golden and juices are bubbling. Enjoy hot or cold, for dessert with ice cream or breakfast with yogurt!
