Salsa de Tomatillo

Ingredients

5 tomatillos, husks removed
1 clove of garlic finely chopped
1 handful of chopped coriander
1/2 fresh jalapeno pepper seeded
Juice from 1/2 fresh lime
1/2 teaspoon salt

Directions

Place in ingredients into your food processor and pulse until coarsely combined. Place into refrigerator and chill. It's best prepared a couple of hours before serving so that favours can develop. Serve with BBQ chicken, fish or Mexican dishes.
