Crispy Leeks

Ingredients

1 T olive oil
Leeks, chopped and then cleaned thoroughly
salt and pepper to taste

Directions

Preheat oven to 150. Line a baking try with baking paper. Pat dry chopped leeks with paper towel. Arrange leeks on the baking tray and drizzle oil over the top, tossing to coat. Bake, stirring occasionally, until golden brown and crisp. Transfer the finished crispy leeks to a plate and season with salt and pepper. These are great on top of salads, steamed green beans, in sandwiches, etc.

It is wonderful to have such good quality vegetables delivered to the door each week and I am full of admiration for Martin for developing an enterprise which benefits so many people and the land.
