Courgette Frittata

Ingredients

1-2 courgettes, sliced in thin rounds
1 clove garlic, minced
2-4 eggs, beaten
⅓ c mozzarella cheese
olive oil

Directions

In a cast iron fry pan, sautee’ courgettes on medium to low heat until half-way done. Lower heat and add minced garlic. Cook slowly until garlic and courgettes are soft. Add beaten eggs and allow mixture to cook until eggs are firm in the middle but still liquid on top. Add cheese and put fry pan under the grill until cheese is bubbly and slightly browned on. Serve with crisp green salad.
